The Kiss of Shadow (and the rest of Jacob’s Brunch feast)

Jacob really knocked it out of the park with this one. Here are all of the recipes used to make the many courses of his brunch submission. Enjoy.

The Kiss of Shadow (Cocktail)

Our cocktail is based loosely off this, and was developed through just general cocktail knowledge from many sources.

  • 2 oz Gin of your choosing

  • 1 oz Fresh Lemmon Juice

  • 1 oz aquafaba (ideally from salt-free chickpeas, but I used low-salt and that worked fine)

  • 0.5 oz simple syrup (more or less to taste)

  • Luxardo Cherry to garnish

  1. Throw it all, expect for the cherry, into you favorite cocktail shaker with ice.  Shake, and strain into your fanciest coup.
(Optionally, invite your favorite haunted doll to kiss your creation.)

  2. Garnish with a cherry on a cocktail (or tooth) pick and serve to your unsuspecting friends!

Hummus & Chickpea Flatbread

The hummus was literally this exact recipe. Change nothing. It is perfection. Make it right now.

The flatbread was adapted from this recipe. The original recipe is probably better than my abomination, but if you want to try your hand at it, here you go:

  • ~2 C chickpea flour

  • ~1 tsp baking baking poweder

  • ~1 C plain Greek Yogurt

  • Pinch of salt

  1. Combine ingredients, adding more yogurt if mixture is too dry, or more chickpea flour if too wet. Bring together until it’s a playdough-ish consistency.

  2. Divide into ~4 pieces and roll each one out onto a piece of parchment paper.

  3. Heat a griddle to medium. Brush your little flatbreads with the oil of your choosing, place prepared units onto griddle and cook until brown and naan-looking. Flip and cook the second side.

  4. Optionally brush with melted butter. Even more optionally, put some minced garlic in that there butter. More ideal, don’t make this recipe.

Roast Beef & Veggie Sandwiches with Aquafaba Horseradish

The roast beef was this exact recipe. If you have an sous vide and enjoy consuming flesh, make this immediately.

The Horseradish mayo was made by mushing 2 recipes together. Firstly, make the mayonnaise in this recipe. Then, use that mayonnaise as the mayo in this horseradish mayo recipe.

For the chickpea salad in the veggie sandwiches:

  • 1 Can Chickpeas

  • Some chopped celery

  • Some capers

  • Some above horseradish mayo

  • Some yellow and dijon mustard

  • Salt and pepper to taste

I just mushed the chickpeas up a bit then added everything else until it looked and tasted good. Easy. Breezy. Beautiful.

Chickpea Peanut Butter Cookies

I used this very good recipe, but with the following substitutions:

  • Swap peanut butter for the cashew butter

  • Swap peanut butter chips for the chocolate chips

I recommend sprinkling the cookies with fancy, flaky salt before baking, so long as you plan on serving them soon after. (It really helps with the appearance). But if you leave em sitting around for a bit, the cookies will absorb the salt, apparently.
